Baked Potatoes 7 Ways

Why, hello!  Welcome back to me from not-on-earth’s-face.  Well, another side of it, anyway.  We had a lovely trip to Chicago for a dear friend’s wedding and to Utah to spend lots of time with Grandma & Grandpa (and eat a not insignificant number of paes de queijo).  We returned to an eerily shutdown city…so bizarre.  The one advantage is having my furloughed husband home with our crazy kids who are still adjusting their sleep back from vacation-time.  Don’t worry, photo dump to come soon.

But!  In the meantime.  It’s finally feeling like fall here now and that means that it’s all soup and potatoes over here.  Here are a few fun and slightly nontraditional ways of cooking up your baked potatoes for the upcoming season!

1 – Baked Sweet Potatoes Stuffed with Feta, Olives and Sundried Tomatoes: These are a few of my favorite things.

2 – Idaho Sunrise: A classic…one that I’ve actually never had.  But!  Eggs and potatoes, what’s not to like?

3 – Roasted Grape, Goat Cheese, and Honey Sweet Potato: I mean, ridiculous.  I’d happily take this for dessert.

4 – Southwestern Baked Potato: I’d omit the meat, of course, but love the rest.

5 – Samosa-Stuffed Twice Baked Potato: We made this last night for our dear guinea pigs friends, and they were nice enough provide happy reviews and to not think us totally weird.  Or at least like us anyway.

6 – Quinoa Stuffed Sweet Potato: Just looks delicious.

7 – Spiced Chickpea Smothered Sweet Potato: I’m loving the stew-like consistency of this one.  So warm and hearty.
